Tuna Potato Patties
Ingredients:​
​For 12 patties:

300 g potatoes, boiled and cooled

1 can (170 g) tuna in water, drained, flaked

2 green onions, chopped
-
1 egg
-
lemon zest from 1 lemon
-
1/2 cup breadcrumbs
-
Salt and freshly ground black pepper

2 tbsp olive oil
-
1/2 cup breadcrumbs, for coating

For Garlic Aioli:

½ cup mayonnaise
-
1 clove garlic
-
¼ teaspoon salt and pepper
-
1 tablespoon freshly squeezed lemon juice
Preparation:
For the patties:

Mash the potatoes using a potato masher.

Add the tuna and mix with a fork. Add chopped green onions, egg and breadcrumbs.

Finally add lemon zest and season with salt and pepper. Stir well to combine.

Divide mixture into 12 portions. Shape them into patties. Place breadcrumbs on a plate and coat both sides of the patties. Place on a greased baking sheet.

Bake in a preheated 350F oven for about 30 minutes, flipping halfway, until golden.

For the aioli:

Place mayonnaise in a small bowl. Make a paste with the garlic and salt: using the flat side of a knife, crush the garlic, add salt and mash until a paste is formed. Stir into the mayonnaise along with the lemon juice and black pepper.
Serve patties hot with garlic aioli!
