Easy Vegetable Quiche
Ingredients:​

3 to 4 slices of bread (loaf type)

1 tbsp (15 ml) vegetable or olive oil

1 medium onion, thinly diced

1 bunch of asparagus, cut into 1 inch pieces

1 bell pepper (red, yellow or orange) cut into cubes

6 large eggs
-
½ cup (125 ml - 125 g) ricotta, cream or milk
-
1 cup (375 ml - 100 g) grated cheddar cheese

Salt and pepper, to taste
Preparation:

Preheat the oven to 400 ° F.

Line a 9-inch square baking dish with parchment paper.

Divide the slices of bread in the pan to cover the bottom. Place in the oven to toast for 10 minutes.

Heat a large skillet over medium-high heat and add the oil.

Brown the onions for about 2-3 minutes.

Add the asparagus, peppers, salt and pepper and cook, covered, for 5 minutes.

Pour this mixture over the bread slices.

In a bowl, whisk the eggs and add the ricotta. Then pour over the vegetable and bread mixture.

Top with grated cheddar.

Bake for about 20-25 minutes until the cheese is golden.
