Date, Pecan & Coconut Energy Balls

Ingredients:​

For 12 servings:

  • 1 cup  pecan halves

  • 1 cup whole pitted dates

  • 2 tablespoons grated unsweetened coconut flakes and more for coating

  • 2 tablespoons unsweetened cocoa powder

  • 1/4 teaspoon vanilla extract

Preparation:

  • Preheat the oven to 350°F.

  • Toast the pecans for 15 minutes. Let cool.

  • In a small bowl, cover the dates with boiling water and soak for 10 minutes.

  • Drain the dates and place them in the bowl of your food processor. Grind until they form a thick paste. Add the pecans and grind until they are finely chopped. 

  • Transfer the mixture to a bowl and add the coconut flakes, cocoa powder and vanilla extract. Mix well with a wooden spoon.

  • Divide into 12 portions. Roll into a ball and coat in coconut flakes.

  • Keep refrigerated.
